Mukimu

Ingredients

Corn

Dried split peas

Potatoes

Butternut squash

Onions

Oil

Salt

 

Directions

Boil the peas, until tender. Peel potatoes. Add potatoes, squash and corn with peas (after peas are well cooked). Boil until potatoes are ready to mash. Drain water, (make sure to not add too much water to begin with). Drain water and make it completely dry. Add salt as you mash and mash everything together.

As you’re mashing, fry onion with oil. Some people add butter without the onion but I like the onions for flavour. Mix in with the mukimu.
