Mango Pudding Recipe

Ingredients

2 cups boiling water

1 cup sugar

4 packages of gelatin (Knox version – orange box)

1 large can of mango puree (the Indian version is the best! I found it at Superstore.)

2 cups of whipping cream

1.5 cups of milk (1 or 2%)

Directions

In a large mixing bowl, dissolve sugar with 1 cup of boiling water.

In another small mixing bowl, dissolve gelatin with 1 cup of boiling water.

Once both 1 and 2 have cooled, pour the dissolved gelatin into the bowl with the dissolved sugar and mix.

Mix in mango puree.

Mix in whipping cream.

Mix in milk.

Pour mixture into moulds or large container and place in fridge for 4 hours (or overnight for best results).
