Mom’s Mini Cheesecakes


24                              paper muffin cups

1 package             vanilla wafers

1 cup                        sugar

3                                 8 oz packages of cream cheese

4                                 eggs

2 tbsp                      lemon juice

Toppings: cherry, blueberry, strawberry pie filling or fresh berries, your choice!



Preheat oven to 350 degrees. Line pan with cupcake liners.

Beat egg. Add sugar, cream cheese and lemon juice and mix until smooth. Place vanilla wafers in bottom of each liner. Spoon in batter over wafer, ¾ full. Bake for 18-20 minutes.

Cool. Cupcakes will sink in the middle. Spoon filling on each cupcake.

Refrigerate for at least one hour.
