Brie, Pear and Fig Chicken


Inspired by my favourite sandwich from Earls and the excessive amounts of brie leftover from your shower! I made the recipe up myself, so the measurements and directions aren’t precise. Good luck. 



4-6           Chicken Breasts or Tenders (double amount if using tenders). Slice in half (like a sandwich).

1               Large Lemon

¼ cup     Olive Oil

2-3           Garlic cloves

Salt and Pepper


Lots of   Brie slices

Some     Fig Jam

2               Pears, cut into slices

6               Pieces of cooked bacon


Marinate the chicken in the olive oil, lemon juice, garlic and salt and pepper. Set aside for 20 minutes or put in fridge to marinate for a few hours.

Sautee chicken until cooked. Spread brie jam on one side of chicken, add a couple slices of brie, a piece of bacon and a couple slices of pears. Fold chicken over. Put back in pan, turn heat onto low, cover and cook until brie melts and pear is soft.
